ingredients needed:
1 tube of uncooked rolled sausage (i used bob evans italian)
1 bag of frozen cheese tortellini
2 cans diced italian tomatoes (drained)
3 cups chicken broth
1 pkg of cream cheese (full fat--low/reduced fat doesn't melt and gets curdly)
bag of fresh spinach (about 10 oz)
small container of fresh sliced mushrooms
salt and pepper to taste
-just cook the sausage in a skillet, try to break it up as much as possible
-throw everything in the slow cooker (my tortellini was still frozen and i cut up the cream cheese into several bite size pieces)
-cook on low 4-5 hrs
-sprinkle with some parmesan cheese
-serve with garlic bread and a salad
-very tasty and there was enough for us to eat again the next day
