Kabobs Recipe
Ingredients: (makes 6 kabobs)
1 lb. skinless, boneless chicken breasts, cut into 1 inch pieces
1/4 c. plain low-fat yogurt
1 TB. lemon juice
1 ts. dry mustard
1 ts. ground cinnamon
1 ts. curry powder
1/2 ts. salt
1/4 ts. crushed red pepper
1 large sweet red pepper, cut into 1 inch pieces
1 yellow squash, cut into 1 inch pieces
(i also added some mushrooms and green bell pepper!)
Directions:
Combine yogurt, lemon juice, mustard, cinnamon, curry, salt and red pepper. Place chicken in resealable plastic bag and pour mixture over it. Seal bag and turn to coat all pieces. Refrigerate for 1 to 4 hrs to marinate.
Preheat broiler. Thread chicken and veggies on 6 metal skewers, leaving a bit of room between pieces. Broil 8-10 minutes, turning once, until chicken is no longer pink.
Ingredients:
2 Roma tomatoes, chopped
1/2 c. grape tomatoes, halved
1 TB balsamic vinegar
1 ts. oregano (fresh or dried)
1 ts. thyme (fresh or dried)
1 ts. honey
1 clove garlic, minced
salt and pepper to taste
Combine all ingredients---cover and chill up to 4 hrs.
i just served it up with pita and couscous---de-lish!
